Grilled Baby Peppers, Avocado & Chickpeas Couscous Salad

Another Healthy salad today guys!
Quite similar to the ones I’ve been posting this week but this time with couscous!
I absolutely loved it – I combined chickpeas, grilled baby peppers, ripe avocado and lots of lemon juice in the dressing!
And I had two big bowls of it! Sooo good!

Mummy’s Fast & Easy

Here are the ingredients!


  • 500g couscous
  • 2 ripe avocados, chopped
  • 200g baby peppers, grilled
  • 200g tinned chickpeas

For the dressing:

  • 100ml olive oil
  • juice from 1 lemon
  • salt

  1. To prepare the couscous, empty it in a bowl and cover with hot boiling water (unless otherwise stated on the package). Leave to cool down.
  2. Add the salad ingredient to the couscous.
  3. Combine the dressing ingredients in a mixing bowl and pour over the couscous salad.
  4. Mix well and serve with extra lemon slices!

Tip: Try adding crushed garlic clove!
